    I used quinoa instead of bulgur.

    I eat a lot of brown rice- basmati to be specific. But I have recently started cooking quinoa in my rice cooker. It is really an amazing food. Such a complete protein with a great nutritional profile. So much so that NASA is looking at it for growing and eating on long range space flights.

    I get it at Costco and it is not expensive.

    I first learned about it from the 'Supersize Me' documentary by Morgan Spurlock. His girlfriend at the time was a hardcore vegan or something, and she made him a bunch of quinoa and salads to detoxify after the experiment.

    I saw that documentary but didn't recall that part. Here is what Wikipedia says about the nutritional value of quinoa:

    Quinoa was of great nutritional importance in pre-ColumbianAndean civilizations, secondary only to the potato, and was followed in importance by maize. In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (18%). Unlike wheat or rice (which are low in lysine), and like oats, quinoa contains a balanced set of essential amino acids for humans, making it a complete protein source.[13] It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten-free and considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA'sControlled Ecological Life Support System for long-duration human occupied spaceflights.[13]

    It is a salad traditionally made with bulgur and originating in Arabia. You will find it at a Greek restaurants and other places now. It usually includes finely minced onions, cucumbers, tomatoes, parsley, garlic, and a dressing of olive oil and lemon juice.

    And it is healthy, especially if made with quinoa instead of bulgur, but it is also quite delicious.

    I've only tasted tabbouleh from 7-11. It was pretty good. They have a section in the store for vegetarian yuppies like me. It's pretty sweet.

    I know of no connection with AG. I doubt he has ever made tabbouleh.

    I guess this is my own thing, except that tabbouleh has been around for centuries, and I would not have made this thread but for the fact that a highly respected poster here directed me to do so.

    I like tzatziki too and have made that a couple of times to go with with falafel.

    I have never seen tabbouleh at 7-11, but then again, we haven't had them in this area in decades. It is very easy to make at home if you want to try it. Since you are a vegetarian, do you like hummus? That is very easy to make as well.

    Tabbouleh dates back to the middle ages at least, and originated in the middle east (Syria and Lebanon), according to this article: http://en.wikipedia.org/wiki/Tabbouleh

    I am not eating meat on Fridays during Lent and it has been unseasonably warm here, so this light and refreshing salad traditionally served cold, seemed like the perfect dish right now. It is really good wrapped in lettuce leaves.

    Had a Lebanese friend over once and he made tabbouleh (w/bulgur) and lamb kabobs on the grill.......excellent. I remember juicing a shitload of lemons. Said it was a traditional Lebanese meal, no idea where it originated.

    We had a biggest loser contest at the office a couple of years ago and that's when I started really paying attention to what I eat. I lost around 30 pounds (can't remember exactly right now). My team of four guys won the contest. We lost an average of 30+ pounds each. The second place team lost a total of 30 pounds, so it was not even close.

    Within my own team, I came in third, but I have kept the weight off and the three of them have regained all their weight plus some. They did fad things like Adkins and I concentrated on permanent lifestyle change involving more whole grains and fruits and vegetables, and smaller portions. I was looking for something that would be tolerable for the long term.

    I am not a zealot about it and I still like my pulled pork and ribs every now and then, and every other weekend I will whip up some biscuits and sausage gravy.

    So my original motivation was that contest but my ongoing motivation is good health. It is not that hard for me because I like all kinds of foods and love to cook, so it is a simple matter of trying to make good and informed choices.

    I don't ever eat fast food. But when I travel on business, I do tend to eat much more richly, either on the expense account, or when being wined and dined by others. So I have to double down when I get home and try to even things out.
